SAMAAN
01Soak the mixed dal for 30 minutes, then pressure cook with turmeric, salt and 3 cups water for 4 whistles.
02Rub flour, semolina, ajwain, salt and 4 tbsp ghee together, then knead into a stiff dough with a little water.
03Mix the potato, peas, amchur, garam masala, chilli and salt for the stuffing.
04Divide the dough into 8 balls. Flatten each, fill with stuffing and seal well.
05Bake at 200°C for 30 to 35 minutes, turning once, until golden and hollow sounding.
06Heat 2 tbsp ghee, crackle the jeera, add Sunder Dal Masala and pour over the dal. Simmer 5 minutes.
07Crack each bati, dip in warm ghee and serve with the dal.
SAWAAL JAWAAB
Can I make bati without an oven?
Yes. Cook them covered in an appe pan or a heavy kadhai on low heat, turning often, for about 30 minutes.
Why five dals?
Each cooks to a different texture, which gives the dal body without cream.
