SAMAAN
01Knead flour, curd, soda, salt and water into a soft dough. Rest 30 minutes.
02Heat oil, fry the garlic until golden, then add onion and cook until brown.
03Add tomato puree, Kashmiri mirch, coriander powder, kitchen king and salt. Cook until oil separates.
04Add 1/2 cup water and the paneer. Simmer 5 minutes.
05Stir in garam masala, crushed kasuri methi and butter.
06Roll the dough into thick rotis. Wet one side and stick it on a hot tawa, wet side down.
07When bubbles form, flip the tawa upside down over the flame and roast the top until charred spots appear.
08Brush the rotis with butter and serve with the paneer.
SAWAAL JAWAAB
Can I bake the roti instead?
Yes. Bake on a hot tray at 250°C for 4 to 5 minutes.
Is the garlic too strong?
Frying it golden first mellows it into a sweet, nutty flavour.
