SAMAAN
01Knead the flour with water and a pinch of salt into a soft dough. Rest it for 20 minutes.
02Squeeze the chopped onion in your palm to remove extra juice.
03Mix the potato, onion, chillies, coriander, ajwain, chilli powder, amchur, garam masala and salt.
04Roll a ball of dough into a 5 inch disc, place a big portion of filling and pleat it shut.
05Dust with flour and roll gently into a thick 8 inch paratha.
06Cook on a hot tawa until spots appear on both sides.
07Brush with ghee and press down with a spatula until deep golden and crisp.
08Serve hot with a lump of white butter, curd and pickle.
SAWAAL JAWAAB
What is white butter?
Unsalted, lightly cultured butter churned from cream. It is softer and milder than yellow table butter.
Can I make the filling ahead?
Mix the potato and spices ahead, but add the onion just before rolling so it does not release water.
