SAMAAN
01Whisk hung curd, roasted besan, ginger-garlic paste, lemon juice, salt and 1 tbsp oil until smooth.
02Stir in kuti teja mirch, Kashmiri mirchi, garam masala, ajwain and kasuri methi.
03Fold in paneer, capsicum and onion until every piece is coated.
04Cover and rest in the fridge for 30 minutes.
05Thread onto skewers, alternating paneer and vegetables.
06Heat a heavy tawa or grill pan with the remaining oil. Cook the skewers on medium-high, turning, until charred at the edges, 8 to 10 minutes.
07Sprinkle chaat masala and serve hot with onion rings, lemon and green chutney.
SAWAAL JAWAAB
Can I make paneer tikka in the oven?
Yes. Bake at 220°C for 12 to 15 minutes, then grill for 2 minutes for the char.
Why is my marinade runny?
The curd was not hung long enough. Hang it in muslin for at least 2 hours, or add a little more roasted besan.
